I'll have to trust you on this one, I know very little about flowers. Roses are pretty much the only ones I recognise.

Those are actually, believe it or not, flowering cabbage. Related to other cabbage-family vegetables and theoretically edible but quite bitter, as they are really grown for color and appearance.
